Sponge cake with lemon cream

"If life gives you lemons, make lemonade" . Well, I make lemonade, biscuits, creams, meats, fish ... it's to see how the lemon trees are, you have to take advantage of them all, so I keep preparing recipes with them.
This is for the very lemon trees because it knows well lemon lemon, we like it a lot we love life.

Sponge cake with lemon cream

4 eggs
250 g. of sugar
200 g. of sunflower oil
100 g. of cream
Grated 1 large lemon
260 g. of flour with yeast

We beat the eggs with the sugar until obtaining a white and spongy mixture, we add the oil, the cream and lemon zest, we integrate well and finally we add little by little the sieved flour moving with a spatula with enveloping movements until it is well incorporated into the mixture.
We grease an oven-proof mold, pour the dough into it and cook in the oven preheated at 190º for 55 minutes.

Lemon cream

2 eggs and 150 g. of lemon juice
125 g. of sugar
80 g. of butter in pieces

We put all the ingredients in a saucepan and beat well. We put to the fire and we leave, without stopping to stir until the mixture thickens. We can also do it in the same way but in a water bath, putting a metal container with the mixture well whipped, in a saucepan with water and stirring until the cream thickens.

We prick the surface of the hot cake with a needle or fork and pour the hot lemon cream too.
Let cool and eat.
