Cardamom and lemon muffins

On more than one occasion I have commented that we have 3 lemon trees and therefore many lemons that I use in countless recipes and lots of lemonade. This time I decided to make a cupcake with a touch of cardamom and they have been very fluffy and rich.

Lemon muffins

4 eggs
200 g of sugar
150 g. of sunflower oil
170 g. de leche
Juice and zest of 1 lemon
1/2 teaspoon ground cardamom
300 g. of flour with yeast

We beat the eggs with the sugar until the mixture is well fluffy.
Without forgetting to mix add the oil and then the milk. When they are well integrated, we put the juice, lemon zest and the half teaspoon of ground cardamom.
We sift the flour and incorporate it little by little. We mix and fill the molds 3/4 of their capacity.
We put in the oven preheated at 180º for 20 minutes.
