Custard cardamom with applesauce
Hello! Thank you for your good wishes, they raise my morale, thanks from my heart. My problems are health (of course), they are testing me, nothing serious but very painful, apparently neuralgia that catches my two legs and that let me do everything that I want.
Anyway, I hope that with the right medication this will go better.
As I do not know if I will appear here before the holidays I want to wish you to spend a very Merry Christmas and that next year everything goes a little better in this country, what a good lack it makes us.
And we go with the recipe that I leave you today, I hope you like it.
Cardamom custard with applesauce
550 ml. of milk
1 large egg and 3 yolks
80 gr. of sugar
1 vanilla pod
4 cardamom seeds
1 stick of cinnamon
For the mashed apple:
3 apples stripped and cut diced
3 tablespoons brown sugar
Juice and grated 1 lemon
1/2 vanilla bean
1/2 stick cinnamon
60 ml. of water
Put the fire in a saucepan, the apples with the sugar, the grated rind and lemon juice, the cinnamon, the water and the vanilla, which we open longitudinally and scrape the seeds for get more flavor, stir to combine all the flavors. Let cook for about 25 minutes over medium heat. Once cooked, remove the cinnamon and vanilla, crush and let cool.
Now we prepare the custard:
We put to heat the milk with sugar, cinnamon, ground cardamom, open vanilla and scrape of the seeds. Once hot, but without it boiling, remove from heat and let infuse for 30 minutes.
We strain the milk and put back to the fire.
We beat the egg and the yolks very well and incorporate it little by little to the milk without stirring while we add it, and keep moving until the mixture thickens.
In some small bowls or bowls, we put a few spoonfuls of applesauce in the bottom and the rest of the custard. br> Let cool before serving.
